This isn't my usual, weeknight Brussels sprouts dish. This is great for an occasion like a holiday -Thanksgiving, Christmas, etc - or, well, if you want to have bacon with your Brussels sprouts. It's a treat, and it's pretty yummy.
Ingredients
3 slices of bacon, chopped in small slices
1/2 a small red onion, diced small
about 1lb Brussels sprouts, trimmed and halved
1/2 cup water
1 tbs olive oil
2 tablespoon red wine vinegar
Salt & Pepper
Step 1: Cook the bacon and onion in a skillet until crispy and browned. Set aside on a paper towel.
Step 2: In the same skillet, add the Brussels sprouts, water and about 1/2 tsp salt on medium-high heat. Cover and simmer until the Brussels sprouts are bright and tender. Keep checking on them to make sure they don't brown. Uncover so the water can evaporate.
Step 3: In a serving bowl, mix the Brussels sprouts, bacon, olive oil and vinegar. Add salt, pepper (and more vinegar if needed) to taste and serve warm.
Step 4: Eat responsibly.
